Can you quit a job and get unemployment benefits if you found out the non-profit organization is embezzling money due to a gambling addiction?

No

You are not eligible for unemployment benefits if you quit a job.

However, if you get fired for reporting illegal actions, you would be entitled to unemployment benefits as well as possibly have a claim for wrongful termination under whistleblower laws.

Minnesota's Whistleblower protection law can be found in Minnesota Statutes section 181.932.
